Mini Zucchini-Nut Muffins

Directions


Preheat the oven to 350°F.

Sift together the flours and baking soda together in a large mixing bowl.
Combine the flax and warm water in a small bowl and stir well with a fork. Set aside.
Combine the soy milk and vinegar together in another small bowl. Stir and set aside.
Melt the coconut oil by heating in the microwave for a few seconds and pour into the bowl with the flours.
Add the vanilla, brown sugar, milk mixture, and flax “egg”. Stir everything together until batter forms.

Flourless pancakes

Directions

In a bowl mash up the banana, then beat in the eggs. Make sure to mix well until mixture becomes frothy. Cook in pan on medium heat. Let each side cook for 4-5 mins then flip. Top w/ desired fruit.

 

Blueberry Scones

Directions

Preheat oven to 375*/190*C/Gas Mark 5. In a large mixing bowl combine coconut flour, almond flour, baking powder and sea salt
In another bowl combine eggs, honey, coconut milk and coconut oil. Now, combine wet and dry ingredients, mixture should be slightly crumbly (if necessary you may need to add a few drops more of coconut milk if your mixture seems too dry) Next, gently mix in the blueberries by hand. Form into your favorite scone shape and place on baking sheet lined with parchment paper. Bake for 30 minutes or until slightly brown. .
