Baked Kung pao chicken
Directions
1) Cook your rice as directed on the package. I used my rice cooker! I threw in the garlic before to cook with the rice. Once the rice is cooked mix in the cilantro, lime juice and season with salt.
2) For the meat sauté the garlic and onions in olive oil until softened then add in the ground beef. Break the beef apart and once it's nearly cook add in all the seasons.
3) To assemble: Fill a bowl first with the rice then add in all toppings! I drizzled mine in hot sauce and it was so yummy.
4) Enjoy!
Oven roasted chicken breasts and rainbow veggies
Directions
Preheat oven to 500 degree F.
Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, italian seasoning, and paprika. Toss to combine.
Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice or a salad.
Teriyaki Chicken with vegetables
Directions
In a small bowl mix the Teriyaki sauce ingredients. If you are just making the sauce for future consumption follow this step otherwise follow the next paragraphs. In a small sauce pan, over medium to low heat, heat the sauce until thicken stirring occasionally. About 5 minutes. Let the sauce cool and store it in a glass air tight container in the refrigerator.

Light zucchini noodles tossed in a creamy avocado and tomatillo sauce with taco lime grilled shrimp and juicy roasted tomatoes!
Directions
For the Taco Lime grilled Shrimp:
Marinate the shrimp in the mixture of the taco seasoning and lime juice and oil for 20 minutes.
Skewer the shrimp and grill over medium-high heat until cooked, about 2-3 minutes per side.
For the creamy Avocado zucchini noodle pasta with Taco Lime grilled Shrimp:
Broccolini and Mushroom stir-fry
Directions
Place the olive oil and ginger in a cast iron skillet or any other non-stick skillet. Cook for 1 minute.
Add the broccolini and cook for 2-3 minutes. Add the mushrooms and shallots and cook stirring occasionally for 5 minutes. Add the black bean paste and vinegar and stir for 1 minute. Turn the heat off. Add the sesame seeds if using and serve stir-fry over the quinoa or brown rice.
