Avocado Baked Eggs 

Directions

1. Cut avocado in half. Scoop out enough flesh to make room for the filling I leave about 1/3” / 1cm walls.
2. Sprinkle with salt and pepper, spoon in some bacon, sprinkle with grated cheese.
3. Crack in egg. Sprinkle with salt and pepper.
4. Bake at 180C/350F for 15 - 20 minutes or until cooked to your liking. Serve with more bacon with crusty bread on the side!
